Responsible for the performance and professional workflow in the bakery and related administrative duties working closely with all area employees.
•
Manufacture all baked goods according to specified recipes and standards.
•
Control, implement and ensure safe, professional, economical and hygienic food production and storage, especially adherence to best before dates.
•
Strict control and training of compliance with safety, environmental and hygiene guidelines (USPH/HACCP, ISM/&ISO, SQM, TUIC service standards) in the area of responsibility.
•
Regularly inspect area for cleanliness, repairs, safety and standards with documentation.
•
Create, review and route food, beverage and hotel store orders for the work area according to established budgets and other specifications.
•
Receiving and inspecting merchandise deliveries in the work area.
•
Securing all equipment during inclement weather.
•
Authority to give instructions to all employees in area of responsibility.
•
Working closely with Sous Chefs, including regular reporting; promptly handling conflicts and workflow disruptions.
•
Maintaining logs and checklists as directed; regular supervision.
•
Leading, scheduling, instructing and training subordinate staff with appropriate documentation.
•
Observing and enforcing general principles of order.
•
Scheduling of employees, in special cases also for non-departmental work such as assistance with loading, etc.
•
In special cases, personal assistance with non-departmental work, such as assistance with loading, etc.
•
Checking and, if necessary, carrying out cleaning work/sanitizing using personal protective equipment (PPE).
•
Checking and control of goods transfers and ordering processes in the area of responsibility.
